For us, sustainability is not just a trend, but an essential part of our philosophy. We place great emphasis on resource-efficient processes, high-quality products, and close partnerships with producers who operate sustainably.
Water
We rely on Nordaq water, which is treated using innovative filtration technology. This system allows us to filter pure water on-site without losing valuable minerals. This reduces transportation costs and eliminates single-use plastic—providing an eco-friendly, neutral-tasting solution that pairs perfectly with food and wine.
Wine
Conscious use of resources also plays an important role when purchasing wine. When selecting wines, we prioritize transparent provenance, short transport routes, and long-term partnerships with winemakers who work sustainably and in harmony with nature. We place a special focus on European wine regions and local wineries. This results in a wine selection that combines quality, provenance, and responsible enjoyment.
Coffee
Our coffee comes from the Berlin-based roastery Giest & Compagnon. There, carefully selected beans from renowned growing regions are gently roasted using traditional drum roasting methods—resulting in a clean flavor, artisanal quality, and a commitment to sourcing and raw materials.
Tea
Our tea comes from the long-established Frankfurt-based company Ronnefeldt (since 1823). Carefully selected tea leaves from the world’s finest growing regions are processed with artisanal care—ensuring authentic flavor and a respectful approach to natural ingredients.
Bread
We source our bread from the renowned baker Jochen Gaues, whose baking expertise is highly regarded in many of Germany’s top restaurants. His breads are made using traditional methods—with long fermentation times, natural ingredients, and no industrial baking mixes or artificial additives. The result is a bread with a distinctive character that reflects time, care, and true artisanal baking.
Fish
We use only certified wild-caught fish and deliberately avoid farmed fish. In doing so, we support sustainable fish stocks and guarantee the highest quality and an authentic taste experience.
Waste Reduction
To reduce food waste, we deliberately avoid serving buffets at our events. Instead, we serve individually prepared dishes—fresh, high-quality, and perfectly balanced. Through these measures, we actively contribute to a more sustainable future without compromising on quality or taste.
